A menu with no cutlery and no fuss!

Today we invite you to abandon knives, spoons and forks to enjoy a 100% cutlery-free menu which will pair perfectly with some of our wines. It is recognized that eating with your hands has some benefits, including improving digestion because, by touching our food with our fingers, the nerve endings on the fingertips signal to the brain that we are about to eat, this message is immediately transmitted to the stomach which begins to prepare for digestion by releasing the digestive juices and enzymes necessary for correct digestion. It is also a slow, conscious and very natural way of eating which discourages eating too much and awakens all the senses. So whether it is for these good reasons or because you have planned to dine in front of your favorite series or the decisive match of the season, we hope that you will find in this menu exclusively composed of finger food based on traditional recipes, the magic and pleasure of food and wine pairings savored almost without dishes!

Savory cannelés with chorizo and Comté cheese

Canelés au chorizo et au comté

Here's a traditional Bordeaux speciality that we've already suggested to you, and we like the recipe in a slightly more daring savoury version: canelés with chorizo and comté cheese.

Ingrédients

  • 60 g of butter
  • 50 cl of milk
  • 140 g of Comté cheese
  • 100 g of flour
  • 100 g of chorizo
  • 1 egg
  • 1 egg yolk
  • Salt, pepper
  • Paprika

 

Get your aprons on!

Preheat the oven to 210°C.

Melt the butter and milk in a saucepan. Cut the chorizo into small pieces and grate the Comté cheese. Mix the egg and egg yolk in a bowl, then add the flour a little at a time.

Whisk in the milk and butter mixture in batches to avoid lumps. Add the paprika.

Season with salt and pepper. Pour the batter into the silicone fluted moulds and bake in the oven for 35 minutes.

To accompany this appetiser, we suggest our Château La Perrière 2022, which will blend harmoniously with the spices used to make the chorizo.

Cod tacos

Deux tacos au Cabillaud dans un plat blanc

Cod offers all the benefits of a lean fish. Rich in protein, it is a low-calorie fish with a very high iodine content. This helps the thyroid to function properly. This fish is used in a new version of the typical Mexican dish: tacos. Discover the recipe for cod tacos, a simple, balanced dish that's perfect for your TV dinners.

 

Ingrédients

  • 400 g of cod fillets
  • 3 tablespoons cornflour
  • 1 sachet condiment mix, e.g. 28g Taco Mix
  • salt
  • 1 bunch parsley or coriander
  • 2 spring onions
  • 6 snack cucumbers
  • 100 g red cabbage
  • oil for frying
  • 8 mini tortillas or taco shells
  • 8 tablespoons mango salsa
  • 80 g spinach salad
  • 3 limes

 

Get your ustensils !

Cut the fish into 2 cm cubes. Mix the cornflour with the seasoning mix, then turn the diced fish into it. Season with salt. Remove the leaves from the parsley. Cut the onions and cucumbers into thin slices and the red cabbage into strips. Fry and grill the fish for about 2 minutes in the oil. Top the tortillas with the fish, salsa, spinach, onion, parsley and cucumber. Chop the limes and serve with the dish. All that's left to do is enjoy!

Oven-dried apples with honey

For the final touch of sweetness, we've opted for a versatile, appetite-suppressing fruit with a delicious twist: baked apples with honey. It's a quick and easy recipe that can be adapted with other fruits!

 

Ingrédients

  • 4 large apples
  • 60g liquid honey
  • 60g butter

 

In the kitchen !

Preheat your oven to gas mark 7/8 (220°C). Peel the apples and core them using an apple corer.

Place the apples in an ovenproof dish and drizzle with liquid honey. Dot each apple with a knob of butter and place in the oven for 20 minutes. Baste the apples with the cooking juices halfway through the cooking time, after 10 minutes.
